Coming from another region, in Castilla la Mancha it is showing its best version

Late sprouting, which helps avoid the spring frosts effects. The persistent drought is fought by a low irrigation during summer season to get its best maturation and development in our region. Graciano wines are generous in acidity and low in alcohol, an unusual and different vision of the wines of Castilla-la Mancha. Who will talk about warm weather when you uncork a bottle of Ulterior Graciano?

The tannins get smoother with time. A 10% is aged in of 600 liters  French oak new barrels and the rest, as our ancestors did, in earthen jars (clay) of 300 arrobas (about 5000 liters) for 8 months. After bottling it has been in our underground cellar for more than 12 months.

Aging potential: Verum puts its wines on sale when they are at the optimum moment for consumption;  nevertheless, you can store  this wine up to 7 years after harvest. Longer than that you may still  find a great wine.

Tasting notes: Cherry red with white trim, bright. On the nose it is  intense, highlighting the floral character of violets, lavender and other aromatic herbs, typical of the Mediterranean scrubland. All of that with a background of black fruit and subtle cocoa. On the palate it is also intense, sweet, with smooth tannins that provides structure. Good persistence that brings back black fruits and violets with a touch of bitterness that adds character.

Food pairing: try to avoid artichokes, asparagus and any dish with marked citric carácter; except those,  enjoy with a ham sandwich or smoked salmon. It does not matter fish or meat, Its acidity and structure will make it a delicious match.
